Chinese Vegetables Recipe-Tofu Fried with Leeks 蒜苗豆腐

 

Tofu Fried with Leek is a popular Chinese vegetables recipe from Teochew cuisine. It is full of nutrition and have a balance diet with combination vegetables, tofu and meat. This dishes have a good symbolic meaning and Chinese will always cook during Chinese New Year Eve or 7th day of Chinese New Year. The Leek in Chinese called “Suan-蒜” which pronounce same as calculating word in Chinese called “Suan-算” too which as an auspicious symbol of wealth (a lots of money to count) in the coming year.

Ingredients

  • 2 Stalks Leek
  • 2 Gloves Garlic
  • 2 Pieces Tofu
  • 200 Grams Pork Belly *** Grilled Pork Belly are highly recommended.
  • 100 ml  Oil
  • 2 Table Spoons water *** For cornstarch water
  • 2 Tea Spoons Cornstarch Flour *** For cornstarch water
  • 1/2 cup Water

Directions

Step 1: Remove the root part and wash thoroughly the leek as there is soil trapped in between the leaves. Then slice accordingly and slice 2 gloves of garlic.

 

 

Step 2: Slice the grilled pork belly (烧猪肉) or fresh pork belly (三层肉).

 

 

Step 3: Cut the Tofu into cube size then deep fried it until golden color.

 

Step 4: Mix 2 table spoons of water with one tea spoons of cornstarch for thicken purpose (勾芡).

 

Step 5: Ready a wok/ pan with heating 2 table spoons of oil. Then put in garlic and pork belly for stir frying around 2-3 minutes. After that, mix in the leek to continue stir frying for 2-3 minutes and put in one tea spoons of salt, one tea spoons of light soya sauce, 1/2 tea spoons of sugar and half cup of water. After boiling for 2 minutes, mix in the fried Tofu to continue cook for 3 minutes. Finally mix in the cornstarch water for thicken the soup base and stir frying for 1 minutes before ready to serve on plate.
